Coconut milk rice pudding

A winter favourite. Sweet and rich, this pudding is a classic and not that difficult to achieve. Sprinkle some shortbread if you desire for added crunch.

INGREDIENTS:
Serves 4

200g Carnaroli rice (or any other short grain rice)
850ml AYAM coconut cream
150ml AYAM coconut milk, plus extra
150g caster sugar
AYAM palm sugar syrup to serve
METHOD:

In a saucepan, combine rice, coconut cream, coconut milk and caster sugar. Bring to boil then reduce heat and simmer for a good hour, or until rice is tender. Stir regularly to avoid rice clumping together and add more coconut milk if required.

Serve in a bowl drizzled with a generous amount of palm sugar syrup.
